Avocado Chocolate Smoothie FOR TODDLERS

My little grandkids love to try their Grandma's innovation. The older one who is 3 years old always asks Nani is this healthy? Is this organic? They are the perfect audience for all my toddler recipes as they give me real time feedback. This recipe is a special one because it is always a hit with my grandkids. It includes avocado and dark chocolate, both favorites. So here is a beautiful blend of these two ingredients. Avocados are natural good fats and rich in fibre that support kids with digestion and in their brain development. Dark chocolate is rich in anti-oxidants and also makes the recipe tasty and enticing for your toddlers.


For the whipped cream I use 35%.

INGREDIENTS:
2 very ripe avocados
4 ounces 70% cacao baking chocolate, melted*
1/4 cup unsweetened cocoa powder
1/3 cup almond milk/ regular milk
1/3 cup maple syrup
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
sea salt
optional toppings: chocolate whipped cream or coconut whipped cream** (see below), roughly-chopped dark chocolate, berries, nuts, etc.

INSTRUCTIONS
In a food processor, combine the avocados, melted chocolate, cocoa powder, maple syrup, almond milk, vanilla, cinnamon and a pinch of salt. Puree until creamy. Spoon the mousse into 4 small ramekins and chill for at least 1 hour.
Serve the mousse topped with a dollop of whipped cream and/or your desired toppings.

Home made whipped cream
INGREDIENTS:

1 cup heavy cream, thoroughly chilled
1 tablespoon powdered sugar (add more/less to taste)
OPTIONAL MIX-INS (CHOOSE ONE):
1 teaspoon vanilla extract,
1/2 teaspoon ground cinnamon

How To:
In a cold blender mix the cream on low speed for about 15 seconds. Then increase speed to high, continuing to mix until soft peaks form.
Add in an optional mix-in to taste, either folding it in by hand with a rubber spatula or mixing it on low-speed for a few seconds until combined.
Serve immediately, or refrigerate for up to 1-2 hours.

You can also give them without the whipped cream.
